This salt cod recipe comes from the Portuguese influences in the Caribbean. It is surprisingly delicious and healthy. Try it and surprise yourself.
250g salt cod or similar salt fish ( boneless)
250g ripe tomatoes chopped
1 onion chopped
2 cloves garlic minced
1tbsp Green herb seasoning or 1 tbsp coriander ( see Green Herb Seasoning recipe)
salt, pepper to taste
1 chilli pepper ( heat all depends on your tastes)
2 spring onions chopped
1 tbsp olive oil
Place salt fish in a colander. Wash with water to remove some of the salt.
Boil pan of water, add salt fish and boil for a few minutes. Throw out the water and replace with fresh water and bring to boil for a 5 minutes. The idea is to get rid of the salt which the fish has been preserved in. Drain fish filets and lay on paper towels.
Heat oil to medium heat, add salt fish and fry for 5 minutes.
Add tomatoes, onion and garlic and fry for another 5 minutes.
Add green herb seasoning and remainder to ingredients.
Cook until tomatoes and onions are soft. Taste and adjust with salt & pepper.
Serve with bread, rice, pitta bread, roti or fry bake as they do in Trinidad.
